Sandwiches + Snacks

Grilled beef, cheese and tomato sandwich

Serves 4


8 slices of bread

2 tablespoons mayonnaise

4 thick slices of roast beef

100g NI brie, sliced (or NI cheddar, thinly sliced)

2 vine ripened tomatoes

Salt and pepper

2 tablespoons olive oil

Handful of salad leaves

Serves 4


Smear 4 slices of bread with mayonnaise, top with roast beef, slices of cheese, tomatoes and season with salt and pepper.

Top with slices of bread to complete the sandwiches.

Brush the top and bottom of each sandwich with olive oil before placing onto a hot grill pan.

Cook for 5 minutes on each side until golden.

Serve with salad leaves.
