Shredded slaw with orange yogurt dressing

Serves 4


100g red cabbage

100g mangetout

1 large carrot

1 red pepper

125ml NI natural yogurt

2 tablespoons coriander leaves

1 teaspoon finely grated orange rind

freshly ground black pepper

Serves 4


Prepare vegetables; thinly shred cabbage, thinly slice mangetout and red pepper, peel and grate carrot.

Toss the vegetables together in a large bowl.

Chop coriander and grate orange rind, add to yogurt, mix well and season with black pepper.

Coat vegetables in yogurt dressing and serve.
