Crisp apple muesli with fresh ginger

Serves 5–6


50g coarsely chopped almonds

100g porridge oats

50g dried apple, finely chopped

30g dried cranberries, finely chopped

1–2 teaspoons fresh ginger, peeled and finely grated

30g liquid honey

NI yogurt

Serves 5–6


Mix all the ingredients (except yogurt) thoroughly in a bowl and place in a roasting tin.

Roast the mixture in the oven at 200°C for 5–10 minutes, or until the muesli is golden brown, stirring a couple of times. The muesli can also be dry roasted in a frying pan. Serve sprinkled on natural yogurt.
