Rocket, apple and cheese salad

Serves 4

Rocket, apple and cheese salad

Ingredients

  • 100g rocket leaves
  • 1/2 cucumber, sliced
  • 1 red apple, thinly sliced
  • 1/2 red onion, thinly sliced
  • 3 teaspoons olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon wholegrain mustard
  • Freshly ground black pepper, to taste
  • 40g cheese, shaved

Method

  • Prepare dressing; whisk together the oil, lemon juice, mustard and pepper. Shave cheese using vegetable peeler.
  • Prepare vegetables; de–seed and thinly slice cucumber, thinly slice apple and onion.
  • Place rocket, cucumber, apple and onion onto serving dish. Drizzle dressing over salad and top with shaved cheese.
  • Tip: Place dressing ingredients in a clean empty jar with a tight fitting lid and shake well to combine.
