Valentine's upside down buttermilk pecan cake

Ingredients

Caramelised Pecans:

50g melted NI butter

100g brown sugar

30ml NI milk

75g pecans

 

Cake:

50g NI butter

200g brown sugar

1 egg

250ml NI buttermilk

1 teaspoon vanilla extract

1 teaspoon of baking powder

200g flour

8 - 10 slices

Method

In a saucepan combine the butter, brown sugar and milk and cook over a medium heat, remove from heat and add in the chopped pecans.

Transfer the pecans to a lined baking dish and spread out to cover the base

In a large bowl whisk together the butter, brown sugar, buttermilk, egg and vanilla extract

Once combined add in the flour and baking powder and whisk to create cake batter

Pour the cake batter on top of the pecan layer

Bake in oven at 180 degrees for 40 minutes

Allow to cool for 10 minutes

Turn over and serve the cake, pecan side up with a generous dollop of cream
