The Dairy Matrix

Dairy foods naturally contain a variety of different nutrients within complex physical structures – from liquid milk to the gel–like structure of yogurt, to solid cheese.

The Dairy Matrix concept is that this unique combination of nutrients and structure, and how they interact with each other, combine to produce the overall effect of dairy foods on health.
