NI–style cheddar carbonara

Ingredients

Smoked bacon rashers or lardons

2 cloves of garlic, crushed

2 medium eggs

40g NI cheddar

Sea salt & freshly ground black pepper

250g linguini or penne pasta

Sundried tomatoes, to serve

Method

Start to cook your pasta in some boiling water, add some salt to the water.

In a bowl, grate the NI cheddar, some salt and pepper and the eggs. Beat this all together with a fork.

In a hot pan, fry off your bacon or lardons. Once they have started to crisp, add in the crushed garlic and then turn the heat down.

In the bowl with the eggs and NI cheddar, add four tablespoons of the pasta water and beat this together.

You will see the cheese start to melt in the hot water.

Take the pan off the heat and drain the pasta. Add the pasta and mix through for one minute – do this off the heat.

Add in the cheese and egg mix. Be careful – if you do this on the heat the eggs will scramble.

Serve with some shards of cheddar, pepper and a few sundried tomatoes.
