Californian–style croque monsieur / madame

Ingredients

4 slices of sourdough – this makes two toasties

4 slices of NI cheddar (for inside the toastie)

30g of grated NI cheddar (for the top of the toastie)

2 slices ham (if using)

2 tablespoons NI butter

1 tablespoon of Dijon mustard

1 tablespoon of green pesto

1 smashed avocado

Fresh rocket

Sundried tomatoes

Method

Toast the sourdough slices in the toaster then butter all slices.

Add some green pesto to the bottom slice, on top of the layer of butter.

Top with rocket, sundried tomatoes and cheddar slices. If you’re adding ham to your toastie, place the slices under the cheddar at this point too.

Pop under the grill for 3 minutes, or until the cheese starts to melt.

Remove from the grill, add a sourdough lid with some Dijon mustard and sprinkled cheddar on top. Then pop back under the grill until crisp golden.
