Cheese scones

Ingredients

225g self–raising flour

½ tsp salt

½ tsp mustard powder

1 tsp baking powder

Pinch of cayenne pepper

50g NI butter

120g NI cheddar cheese, grated

100ml NI milk

Extra milk for brushing

Method

Sift flour, salt, baking powder, mustard powder and cayenne into a bowl

Rub butter into the flour until the mixture resembles fine breadcrumbs

Add the 100g of the cheese and combine with a knife

Add the milk gradually and mix to a soft, but not sticky, dough with a knife

Roll out on to a lightly floured work surface. Knead lightly until smooth

Gently roll out to about 2cm thick and cut into 7 or 8 rounds with 8cm cutter

Place on a baking tray, glaze with a little milk and sprinkle with the remaining cheese

Bake at 200°C / 180°C fan / gas mark 6 for 15 – 20 minutes or until well risen and golden

Cook on a wire rack
