Prawn & Courgette Ramekins

150g (6oz) prawns
2-3 small courgettes sliced
50g (2oz) butter
2 Ð 3 spring onions
1 Ð2 teas tomato puree
4 tabsp sherry
25g (1oz) plain flour
25g (1oz) butter
250ml (1/2pt) milk
Seasoning
250g (8oz) grated mature cheddar cheese

Method
• Melt the butter in a pan and fry the courgettes and spring onions to soften, add the tomato puree, seasoning, sherry and prawns. Cook for 5 minutes. Divide between four ramekin dishes.
• Prepare the cheese sauce. Blend the flour, milk and butter together in a saucepan stir continuously until it comes to the boil.
• Remove from the heat and stir in half the cheese, divide between the ramekin dishes and sprinkle remaining cheese on top.
• Bake in a hot oven 200oC Gas 6 until heated through approx 20 minutes.
