Prawn & Courgette Ramekins

Prawn & Courgette Ramekins
150g (6oz)
prawns
2-3 small courgettes sliced
50g (2oz) butter
2 Ð 3 spring onions
1 Ð2 teas tomato puree
4 tabsp sherry
25g (1oz) plain flour
25g (1oz) butter
250ml (1/2pt) milk
Seasoning
250g (8oz) grated mature cheddar cheese
Method
Melt the butter in a pan and fry the courgettes and spring onions to
soften, add the tomato puree, seasoning, sherry and prawns. Cook for 5 minutes.
Divide between four ramekin dishes.
Prepare the cheese sauce. Blend the flour, milk and butter together
in a saucepan stir continuously until it comes to the boil.
Remove from the heat and stir in half the cheese, divide between the
ramekin dishes and sprinkle remaining cheese on top.
Bake in a hot oven 200oC Gas 6 until heated through approx 20 minutes.
