Salmon and Sweetcorn Pancakes

To make four servings


1 quantity pancake mix or eight

prepared pancakes.

1 large tin of red salmon or

4 x 100g portions of fresh poached

salmon

1 tabsp fresh parsley

1 small tin of sweetcorn

1 lemon rind and juice

25g (1oz) plain flour

25g (1oz) butter

250ml (1/2pt) milk

100g (4oz) grated cheddar cheese

1 lemon to garnish


* Place the butter , flour and milk into a saucepan and cook, whisking continuously until thickened,

* Add the parsley, lemon rind and juice sweetcorn and cheese stir to melt cheese.

* Add the cooked salmon and spoon into the prepared pancakes, roll up and arrange in an ovenproof dish, cover and place in a medium oven 160oC Gas 5 for 15 - 20 minutes to heat through .

* Serve with mixed salad and garnish with Lemon wedges.
