Curried Chicken Pancakes



To Make four servings-



400g (1lb) cooked chicken

1 small onion

1 tsp ground cumin

2 tsp ground corriander

1/2tsp turmeric

1 green pepper diced

100g (4oz) mushrooms finely chopped

1 tin of chopped tomatoes

seasoning

oil and butter to cook

100g (4oz) chopped mushrooms.


* Chop the onion finely, heat the oil and butter

* Fry the onion until soft, add the vegetables and cook for a further 5 minutes.

* Add the spices cook for a few minutes and add the tomatoes simmer for 10 minutes finally add the cooked chicken and cook for a further 10 minutes.

* Spoon the filling into the pancakes and roll up arrange in an ovenproof dish sprinkle with grated cheese and brown under the grill.


Serve with crusty bread and salad.
