Pancakes
filled with Char Grilled Vegetables

 

To make 4 servings

 

1 red pepper

1 green pepper

1 courgette

1 medium onion

100g (4oz) mushrooms

olive oil for cooking

 

1 quantity pancake batter

to give 8 pancakes.

 

To Make

* Cut the peppers in quarters and remove the core and seeds,

* Wash and slice the courgettes in thin slices.

* Peel the onion and cut into thick slices wash and quarter the mushrooms.

* Place all the prepared vegetables onto a baking tray and brush with olive oil.

* Place the tray under a heated grill and cook until the surface of the pepper skins are blistered and black.

* Place the hot peppers into a plastic bag and leave to cool for 5 minutes , the skin should should peel off very easily.

* Chop the vegetables ,divide between the eight pancakes ( this filling tastes great with the tomato and basil pancake variation ) ,

* Roll up and serve with salad and crusty bread .
