Pancakes for breakfast



Prepare the pancakes in advance to save time.

Store on a plate in the fridge , stack layered with greaseproof paper.

Great for freezing - stack with layers of greaseproof and enclose in cling film before freezing.


For breakfast pancakes add a little paprika pepper to the basic pancake mix.

* Grill 8 slices of lean bacon, cut into small pieces.

* Lightly beat 6 - 8 eggs in a bowl ,add 3 - 4 tabsp milk and chopped parsley. Place the bowl into the microwave and cook on full power until the eggs are set,stir at 1 minute intervals.

* Grate 150g (6oz) cheddar cheese , place a spoonfull of the scrambled egg onto the pancake sprinkle on the chopped bacon pieces and cheese,roll up and serve hot.
