Pumpkin Jam



1.4Kg (3 lb) pumpkin

1.4Kg (3 lb) preserving sugar

300g (12oz )stewed apples

150g (6 oz) preserved ginger

3 lemons juice and rind


Method

* Peel the pumpkin and chop into squares

* Steep the pumpkin and sugar overnight.

* Add the preserved ginger, stewed apples, ginger and the rind and

juice of the lemons boil for one hour.

* Pour into heated jars, seal and label .
