Apple Cake



100g (4oz) self raising flour

pinch of salt

75g (3oz) barbados sugar

50g (2oz) butter

1 medium egg

500g (1lb) eating apples


Method

* Cream the butter and sugar until light and fluffy, beat in the egg.

* Peel and core the apples and cut in fine slices.

* Add the flour and apples to the creamed butter mix and turn into a greased 7" cake tin.

* Bake at gas 5 175oC for 45 minutes until golden brown.

* Serve cold or hot as a pudding with fresh dairy cream.
