3 medium eggs 50g (2oz) plain flour pinch of ground cinnamon 1 carton of natural yogurt 250ml( _ pt) milk 3 medium pears peeled, cored and sliced Topping 75g(3oz) brown breadcrumbs 50g (2oz) butter 1/2 tsp cinnamon 1 tabsp demerara
sugar * Preheat the oven to 190c/Gas 5 * Whisk the caster sugar and eggs until light and fluffy ,fold in the flour and cinnamon and gently mix in the yogurt and milk * Lay the sliced pears in the base of an ovenproof dish and pour the mix evenly on top, bake for 25 minutes * Melt the butter,add the breadcrumbs and cinnamon and toss in butter to coat, sprinkle over the pear pudding and return to the oven for a further 10 minutes. Serve with fresh dairy cream , custard or yogurt. Serves
