Turkey Cottage Pie

 

450g (1lb) potatoes

50g (2oz) butter

1 large onion finely chopped

3 rashers of bacon chopped

50g (2oz) mushrooms sliced

25g (1oz) flour

Seasoning

285ml (1/2pt) milk

125ml (1/4pt) stock

1 tabsp freshly chopped parsley

1 tabsp tarragon

450g (1lb ) diced cooked turkey

25g (1oz) butter

75g (3oz) cheddar cheese grated

Method

* Peel and boil the potatoes, mash, add a little butter and a couple of tablespoonfuls of milk to make a smooth creamy consistency.

* Melt 25g of butter in a frying pan add the onion, chopped bacon and mushrooms cook until tender.

* Sprinkle on the flour and herbs cook for a few minutes. Add the stock and milk and bring to the boil.

* Add the turkey and turn into an ovenproof dish. Pipe the potato on top and sprinkle with grated cheese. Bake for 30 &endash; 40 minutes at 200oC Gas 6
