Chocolate Cream Pots

 

600ml /1 pt dairy double cream

150g (6oz) plain dark luxury chocolate

3 medium eggs

50g (2oz) icing sugar

1 vanilla pod

 

Preheat the oven to 180oC Gas 4

* Heat the cream and vanilla pod until very hot but not boiling.

* Break the chocolate into small pieces and stir into the vanilla cream until it melts.

* Separate the eggs, beat the egg yolks and icing sugar together until well blended, stir in the hot vanilla chocolate cream.

* Whisk the egg whites until thick and fluffy, fold into the chocolate cream ,pour into the ramekin dishes and place in the fridge to chill and set. Decorate with fresh dairy cream before serving.
